Refrigerating your (covered) fudge is one of the easiest techniques to shorten the setting time. Take note of the term covered. While employing this approach, it is necessary to cover your fudge in plastic wrap or place it in an airtight container.
Uncovered fudge kept in the fridge is dangerous. Not only can fudge absorb adjacent scents (hello, cilantro or onion fudge ugh), but the refrigerator is also quite drying. The last thing you want is dried-out, crumbly fudge that looks more like a block of clay than a delicious dessert.
To place it in the refrigerator, do the following:
